Even though Furmint has a long history in Central Europe, it has mostly remained under the radar of white wine enthusiasts – until now!
The Furmint grape is rarely cultivated outside of Central Europe. It requires a very specific climate, ripening late and being highly susceptible to frost and disease, which makes it difficult to grow elsewhere. The grape has been grown in the Tokaj region in northwest Hungary since the 16th century or earlier. It is most well-known for being the primary grape used for Tokaji Aszú, Hungary’s most popular wine variety.
Tokaji Aszú is a sweet dessert wine and was once the most expensive wine on the continent, savored by royalty, aristocracy, and intellectuals. The Furmint grapes undergo a unique natural process to achieve their lush sweetness and balanced acidity. They are susceptible to a rare fungus called Botrytis cinerea, or “noble rot.”
Interestingly, Botrytis cinerea does not ruin the grapes. In fact, it enhances them! As the grapes begin to ripen and then shrivel, the sugars inside are concentrated and intensified, leading to the development of complex flavors of honey and dried fruit in the resulting wine. Other wines with sweet profiles developed through “noble rot” are Sauternes and Barsac wines.

From Sweet to Dry
Furmint has long been celebrated as the Tokaji Aszú grape, but winemakers have begun expanding its potential and using it in new styles. When makers prevent “noble rot” by harvesting the Furmint grape early, higher levels of acidity develop, along with expressive aromas and flavors.
These wines are defined by sharp acidity, grippy tannins, and a bright, full-bodied structure. They’re often described as a unique blend of Sauvignon Blanc and Chardonnay characteristics. The primary notes are lemon, green apple, honey, almond, ginger, smoke, herbal tea, and stony minerality. These intensely dry wines are especially food-friendly and pair exceptionally well with a wide range of dishes.
